No Padma...No Tom...But still tough...

For those of you who have wondered what culinary school was like for me, here's a great recap of the FCI Midterm experience. This article is written by one of my classmates who recently went back to be a judge.

For the midterm, the judges are former students (who are working in the industry) and other chef instructors. For the final, which is essentially the same experience with more complex recipes, FCI brings in the big guns from the industry - executive chefs, food magazine/TV people, Deans of the school (one of my classmates was critiqued by the venerable Chef Andre Soltner), etc.

I had to make the fish en papillote and the apple tart. And fortunately, they weren't too rough with me.

thanks for the update, Bteau...did Rudy inspire you? it's nice to have you back in the blogosphere. I'm definitely spending new year's eve with you next year...the southern tradition of black eyed peas and collard greens just doesn't cut it.
